IngredientsBasil Pesto Rice Spaghetti Pilaf1/2 tbsp. olive oil1/4 cup minced shallots1 garlic clove, minced1 cup long grain rice2 oz. spaghetti, broken into 1/2 inch pieces3 1/4 cups chicken broth3 tbsp. basil pesto1/2 tsp. sea saltDirectionsBasil Pesto Rice Spaghetti Pilaf Heat oil in a non-stick skillet over medium heat. Add shallots and garlic and sauté until shallots are tender about 5 minutes. Add rice and spaghetti and increase to medium-high heat. Stir the rice often and toast until lightly golden brown, about 7 minutes. Add broth and bring to a boil. Reduce to a simmer and cover the skillet. Cook for 15 minutes.
