This Asian inspired rice stir fry will absolutely bring new flavors to your palette. Whether you like or not Asian food, this is something that’s really good! You will enjoy super delicious and creamy brown rice with a hint of ginger, soy sauce, and richness from the veggies. An absolute favorite in my home, and let me tell you that the best part is that it can be done within 30 minutes.

Ingredients

Black Pepper Fried Brown Rice

  • 1 cup brown rice
  • 1 tbsp. grape seed or vegetable oil, divided
  • 2 large eggs, beaten
  • 2 tbsp. grated ginger
  • 3 garlic cloves, minced
  • 1 cup diced carrots
  • 1 cup diced onion
  • 1 cup head of celery
  • 4 oz. white bottom mushrooms, sliced
  • 1/2 cup low sodium chicken broth
  • 1/2 cup chopped green onion
  • 2 tbsp. low sodium soy sauce
  • 1/2 tsp. sea salt
  • 1/2 to 1 tsp. fresh ground black pepper

Directions

Black Pepper Fried Brown Rice

  1. Cook rice according to manufacturer's directions or in a rice cooker. Place into the refrigerator.
  2. Heat a wok or large skillet over high heat, until very hot.
  3. Add 1 tsp. oil and swirl to coat the bottom and sides of the wok.

  4. Add the eggs and cook for 30 seconds to 1 minute. When the bottom is just starting to brown, flip the egg over and cook for an additional 30 seconds.
  5. Transfer to a cutting board and chop into bite-sized pieces.
  6. Clean out the wok with a paper towel and add 1 tsp. oil.
  7. Add the ginger and garlic, stir-frying for 10 seconds.

  8. Add the carrots, onions, celery head, and mushrooms. Stir fry for 30 seconds.

  9. Pour the broth around the outside of the vegetables and stir-fry for another minute or until most of the broth has evaporated.

  10. Pour the remaining teaspoon of oil around the outside of the vegetables.
  11. Add the scallions and rice. Stir-fry for 2 to 3 minutes, breaking up the rice and heating it through.

  12. Add the soy sauce, salt, pepper, and chopped egg. Toss to combine.
