Black rice is extremely healthy and it can be consumed for breakfast, lunch or dinner. All you need is a super delicious recipe that can incorporate black rice. Speaking of delicious recipes here is one yummy salad that has a lot of delicious and nutritious ingredients good for your health and body. Enjoy it for lunch or dinner, or even for brunch.

Ingredients

Black Rice Salad with Mango and Peaches

  • 1 cups black rice not cooked
  • 1 3/4 cups water
  • 3 tbsp. fresh lime juice
  • 2 tsp. vegetable oil
  • 2 tsp. water
  • 2 tsp. fish sauce
  • 1 mango peeled, pitted and diced
  • 1 1/2 peaches peeled, pitted and sliced
  • 1/3 cup fresh cilantro
  • 1/2 cup finely chopped Vidalia onion
  • 3 tbsp. peanuts
  • ¼ cup thinly sliced scallions
  • 1 jalapeno seeded, minced

Directions

Black Rice Salad with Mango and Peaches

  1. Whisk together lime juice, oil, 2 tsp. water and fish sauce.

  2. In a large saucepan, bring to a boil 1 ¾ cup water and rice. Add a pinch of salt. Cover and reduce to simmer for about 25 minutes. Rice should be tender and water absorbed. Remove saucepan from the heat but keep covered for another 15 minutes.
  3. Spread rice onto a rimmed baking sheet and drizzle with dressing. Toss gently and cool.
  4. Place mangoes and remaining ingredients into a large bowl. Add in rice and toss well. Adjust for salt and pepper.
