IngredientsBlack Rice Salad with Mango and Peaches1 cups black rice not cooked1 3/4 cups water3 tbsp. fresh lime juice2 tsp. vegetable oil2 tsp. water2 tsp. fish sauce1 mango peeled, pitted and diced1 1/2 peaches peeled, pitted and sliced1/3 cup fresh cilantro1/2 cup finely chopped Vidalia onion3 tbsp. peanuts¼ cup thinly sliced scallions1 jalapeno seeded, mincedDirectionsBlack Rice Salad with Mango and Peaches Whisk together lime juice, oil, 2 tsp. water and fish sauce. In a large saucepan, bring to a boil 1 ¾ cup water and rice. Add a pinch of salt. Cover and reduce to simmer for about 25 minutes. Rice should be tender and water absorbed. Remove saucepan from the heat but keep covered for another 15 minutes. Spread rice onto a rimmed baking sheet and drizzle with dressing. Toss gently and cool.
