Salads are always a great idea for healthy lunch, brunch or dinner. I love the simplicity of how salads are made, and you don’t need to spend hours in the kitchen to make something refreshing and healthy to keep you full for a long period of time. Speaking of something refreshing, here blueberries have the honor to bring the salad on a higher level and leave the bursting flavor in the salad. Blueberry greek yogurt, fresh blueberries and crunchy bite from the cabbage makes this super crispy and delicious. Try it to believe me.

Ingredients

Blueberry Chipotle Coleslaw

  • 1.5 oz Fage 0% fat blueberry Greek yogurt
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 2 garlic cloves minced
  • 2 tsp. pureed chipotle in adobo sauce
  • 1/2 tsp. salt
  • 2 tsp. olive oil
  • 8 cups coleslaw mix or shredded cabbage
  • 1/2 cup blueberries

Directions

  1. In a small food processor, puree yogurt through olive oil.
  2. Place coleslaw mix in medium bowl and toss with dressing.
