It’s crispy and crunchy from the bread pieces and refreshing from the arugula. What makes this salad so special is the dressing that is creamy and gorgeous. The creamy gorgonzola cheese on top brings so much flavor and contributes to this salad to be super refreshing and savory. I assure you that even the pickiest eaters will love this salad. IngredientsDressing2 1/2 tbsp. low fat buttermilk1 1/2 tbsp. 2% fat Greek Yogurt - I used Fage1 1/2 tbsp. light mayo1/2 tbsp. apple cider vinegar1/2 tbsp. water1/4 tsp. salt1 1/2 tbsp. minced chivesSalad9 oz. Crusty bread loaf, cut into 1/2 inch cubesCooking Spray1/2 tsp. salt1/4 tsp. garlic powderPinch Fresh Ground Black Pepper1 cup grapes, halved3 cups arugula2 oz. blue cheese, crumbledDirectionsBread Salad with Grapes and Blue Cheese Preheat the oven to 450°. Lay bread in a single layer on a baking sheet. Spray lightly with cooking spray. Turn bread over and lightly spray the other side. Sprinkle salt, garlic powder and pepper over the bread and toss to coat. Bake for 8 to 10 minutes. You want the bread to be crisp like a crouton. Take out of the oven and set aside. For the dressing: Whisk together the buttermilk, yogurt, mayo, vinegar and water. Then whisk in the oil, salt and chives. Refrigerate for at least 30 minutes to let the flavors come together. In a large bowl, toss together the bread, grapes, arugula and blue cheese. Drizzle the dressing around the outside of the salad and toss well. Serve immediately.
