If you are running out of appetizer ideas that are fulfilling just like a regular lunch, then you are going to love this next recipe! It’s super simple to make and while the potatoes are baking in the oven, you are going to prepare the delicious sauce. Easy as that!

When it’s ready to be served just enjoy the warm potatoes with that delicious sauce drizzled on top, and for a bonus here dip some potatoes in the cheesy dip served on the side. Yum!

Ingredients

Buffalo Potato Wings

  • 24 oz. Idaho Potato Fingerling Potatoes
  • 1 tbsp. unsalted butter melted
  • ½ tsp. sea salt
  • ¼ tsp. fresh ground black pepper
  • 2 tbsp. non-fat Greek yogurt
  • ¼ cup buffalo hot sauce

Blue Cheese Dip

  • 5.3 oz. non-fat Greek yogurt
  • ¾ oz. crumbled blue cheese
  • 1 tbsp. milk
  • ¼ tsp. sea salt
  • 1/8 tsp. fresh ground black pepper

Directions

Buffalo Potato Wings

  1. Place butter and oil in a small microwave-safe bowl, and cook on high for 20 to 30 seconds, or until butter melts.
  2. Place potatoes in the baking pan lined with a piece of parchment paper.

  3. Drizzle with olive oil and season with salt and pepper to taste. Bake for about 30 minutes in an already heated oven at 350 F or 180 C degrees.
  4. In a small bowl, mix together yogurt and buffalo sauce.

  5. Pour over potatoes and mix well.
  6. Spoon potatoes into a bowl or plate with dip on the side.

Blue Cheese Dip

  1. Mix together all ingredients and refrigerate for 30 minutes.
