Mole is a traditional sauce originally from Mexico. Generally, it contains chili pepper (whole or ground), fruits (such as bananas), nuts, and spices such as black pepper, cinnamon, or cumin.

Mole is usually eaten with cooked meat.

The version we present in this recipe is based on mole poblano, which uses chocolate to darken the sauce and to develop a delicious flavor.

In addition, we could not resist using barbecue sauce to give this recipe an original touch that we are sure is going to please many of you, especially those BBQ lovers!

We will use this creamy mixture to coat chicken wings that we will cook in the oven.

An explosive and totally tempting recipe!

Ingredients

Caribbean Mole Baked Chicken Wings

  • 1 tablespoon lime juice
  • 1 tablespoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon cumin
  • 1 teaspoon ground cinnamon
  • ½ teaspoon chili powder
  • 1 tablespoon almonds, crushed
  • 1 cup of BBQ Sauce
  • 2 tablespoons cocoa powder
  • 2.5 lb chicken wings
  • To serve: mint leaves

Directions

Caribbean Mole Baked Chicken Wings

  1. Place wire racks on top of two baking sheets.
  2. Preheat the oven to 425°.
  3. Lay out the wings on top of the wire racks and  bake chicken wings for 20 minutes.
  4. Meanwhile, mix together the first 9 ingredients in a large bowl. Put aside a little if you want to use it as a dipping sauce. Take wings out of the oven, and brush them with the sauce until completely coated.
  5. Bake for 20 more minutes, or until chicken is completely cooked. Serve with additional BBQ sauce, if desired.
  6. Serve with chopped mint leaves.
