If you are looking for another cheesecake recipe that is refreshing as it looks, then you are going to love the cherry cheesecake I am about to present you. Easy to make, refreshing and full of flavor, this cheesecake is a queen of baked cheesecakes. The sweetness from the cream cheese and the tartness from the cherries are matching perfectly together and all of that develops the best flavor for your tastebuds. Don’t hesitate to try this amazingly delicious cheesecake and I can tell that everyone will ask for second piece.

Ingredients

Crust

  • 100 g butter, softened
  • 300 g plain flour
  • 1 tsp. baking powder
  • 1 pinch sea salt
  • 150 g granulated sugar
  • 1 large egg

Filling

  • Zest of 1 lemon
  • 100 g granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 14 oz. cream cheese
  • 30 g semolina or cornflour
  • 400 g frozen cherries

Directions

Cherry Crumble Cheesecake

  1. In a large mixing bowl add the flour, baking powder, salt, sugar and stir in the butter and egg.
  2. Form a dough and take ¼ of the dough and place it in the fridge.
  3. The remaining ¾ of the dough spread them in a spring form pan making edges on the sides of the pan.
  4. To make the filling, in a bowl mix the cream cheese, sugar, eggs, zest of a lemon, cornflour and frozen cherries.
  5. Spread the filling in the pan on top of the pastry.
  6. The remaining dough crumble it on top of the cheesecake and bake the cheesecake in an already heated oven at 350 F or 180 C degrees for about 40-45 minutes.
  7. Let it cool completely before serving.
  8. Enjoy.
