Who doesn’t love freshly baked chocolate chip cookies? This recipe will show you how to prepare them in a very healthy way, using coconut oil, and low-fat substitutes for the other ingredients. When you bite into these cookies you will feel the beautiful aroma of freshly baked biscuit dough made and infused with coconut flavor. The preparation process is super easy. Basically everything happens in a bowl and you need to scoop out the cookies and bake them right away.

Ingredients

Coconut Oil Chocolate Chip Cookies

  • 1/2 cup coconut oil
  • 2/3 cup sugar
  • 1/2 tsp. vanilla extract
  • 2/3 cup reduced fat milk
  • 2 2/3 cups (300 g) all-purpose flour
  • 1/4 cup unsweetened coconut flakes, ground
  • 1/2 tsp. sea salt
  • 1/2 tsp. baking soda
  • 1/2 cup mini semi-sweet chocolate chips

Directions

  1. Preheat oven to 350•. Line a baking sheet with parchment paper.
  2. In the bowl of a stand mixer, beat the oil and sugar until light and fluffy.

  3. In a small bowl, stir together milk and extract. Set aside.
  4. In a medium bowl, whisk together flour, ground coconut, salt, and baking soda.

  5. Beat in one-third of the flour mixture, then half of the milk. Repeat ending with flour.
  6. Shape dough into balls and place onto a baking sheet, 2 inches apart.

  7. Flatten slightly with the bottom of a glass.
  8. Bake for 10 to 12 minutes, or until lightly browned.

  9. Place the baking sheet onto wire racks and cool for 5 minutes.
  10. Place cookies directly on the wire rack and cool completely.
