Let them soak for 2-3 hours. Drain well and finely chop dried tomatoes. Preheat the grill to high heat. Cut zucchini’s ends and slice them lengthwise at 0.5 inches thick. Season each slide of zucchini with olive oil, sea salt, and ground black pepper. Cook them on the grill until tender on the inside and browned on the outside. Place slides over a cutting board and set aside to cool them down. In a small bowl, mix goat cheese with Herbes de Provence. In a medium bowl, smash pitted green olives and mix with chopped dried tomatoes. Add in goat cheese and mix well.
