This Layered Greek Dip is a gluten-free and healthy Mediterranean appetizer. IngredientsFirst Layer - Hummus10 oz garbanzo beans, rinsed and drainedHot water1 tsp baking soda1 garlic cloves, minced2 tbsp tahiniJuice of one lemon1/2 tsp Himalayan salt¼ cup extra virgin olive oilSecond Layer - Tzatziki1 1/2 cups 2% fat plain Greek yogurt1 cup cucumber, chopped2 cloves garlic, mincedJuice of 1/2 lemon2 tsp fresh mint leaves, chopped1/2 tsp Himalayan salt2 tbsp extra virgin olive oilThird Layer - Lettuce2 cups lettuce, shredded1/2 tsp fresh oregano, choppedFourth Layer - Salad1 cup tomatoes, diced1/2 cup cucumber, diced1/2 cup green bell pepper, diced1/2 cup white onion, diced1/3 cup Kalamata olives, pitted and dicedLayer 5 - Cheese1/4 cup feta cheese, crumbledDirectionsGreek Layer Hummus Dip Add the chickpeas in a large bowl and cover with hot water and 1 tsp baking soda. Leave for a few minutes. Take the chickpeas by the handful and rub them under running water to remove the skins. Discard skins. Let the chickpeas cool completely before using them. In a food processor, puree chickpeas, garlic, tahini, lemon juice, and salt. While the food processor is running, add olive oil and blend for 4-5 minutes or so. Check, and if the consistency is too thick, add a little hot water. Blend until you reach the desired smooth consistency. Spread the hummus evenly in the bottom of a 6-8 cup serving bowl. In a medium bowl, mix together the ingredients for the tzatziki. Spoon on top of the hummus. Layer lettuce on top of the tzatziki and sprinkle with oregano. In a medium bowl, mix together the ingredients for the salad. Using a slotted spoon, spoon the salad over the lettuce. Do not use the liquid. Top with crumbled feta.
