An easy to make dip with layers of hummus, tzatziki, a topping of tomatoes, cucumber, green bell pepper, red onion, Kalamata olives, and feta. This Layered Greek Dip is a gluten-free and healthy Mediterranean appetizer. 

Ingredients

First Layer - Hummus

  • 10 oz garbanzo beans, rinsed and drained
  • Hot water
  • 1 tsp baking soda
  • 1 garlic cloves, minced
  • 2 tbsp tahini
  • Juice of one lemon
  • 1/2 tsp Himalayan salt
  • ¼ cup extra virgin olive oil

Second Layer - Tzatziki

  • 1 1/2 cups 2% fat plain Greek yogurt
  • 1 cup cucumber, chopped
  • 2 cloves garlic, minced
  • Juice of 1/2 lemon
  • 2 tsp fresh mint leaves, chopped
  • 1/2 tsp Himalayan salt
  • 2 tbsp extra virgin olive oil

Third Layer - Lettuce

  • 2 cups lettuce, shredded
  • 1/2 tsp fresh oregano, chopped

Fourth Layer - Salad

  • 1 cup tomatoes, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup white onion, diced
  • 1/3 cup Kalamata olives, pitted and diced

Layer 5 - Cheese

  • 1/4 cup feta cheese, crumbled

Directions

Greek Layer Hummus Dip

  1. Add the chickpeas in a large bowl and cover with hot water and 1 tsp baking soda. Leave for a few minutes. Take the chickpeas by the handful and rub them under running water to remove the skins. Discard skins. Let the chickpeas cool completely before using them.

  2. In a food processor, puree chickpeas, garlic, tahini, lemon juice, and salt. While the food processor is running, add olive oil and blend for 4-5 minutes or so. Check, and if the consistency is too thick, add a little hot water. Blend until you reach the desired smooth consistency.
  3. Spread the hummus evenly in the bottom of a 6-8 cup serving bowl.
  4. In a medium bowl, mix together the ingredients for the tzatziki.

  5. Spoon on top of the hummus.
  6. Layer lettuce on top of the tzatziki and sprinkle with oregano.
  7. In a medium bowl, mix together the ingredients for the salad.

  8. Using a slotted spoon, spoon the salad over the lettuce. Do not use the liquid.
  9. Top with crumbled feta.

  10. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
