This recipe screams summer like nothing on this planet. Fresh and juicy grilled peaches and soft and almost melty mozzarella with the perfect touch of herbs on top, this crostini are perfect for summer entertaining. The bread slices can be made in advance, so when you need to serve, you will need to grill the peaches and assemble everything together. Enjoying this type of meals are proof that even the easiest meals can be made with minimum ingredients and can develop the best flavors.

Ingredients

Grilled Peach and Cheese Crostini

  • 1 baguette about 1 lb.
  • 3 peaches peeled and sliced
  • 1 tbsp. olive oil
  • 1/2 tsp. sea salt
  • 1/8 tsp. fresh ground black pepper
  • 4 oz. fresh mozzarella thinly sliced
  • 2 tbsp. finely chopped green onion
  • 2 tbsp. finely chopped basil
  • 2 tbsp. finely chopped mint

Directions

Grilled Peach and Cheese Crostini

  1. Preheat oven to 425 degrees.
  2. Cut baguette diagonally into 1/4 inch think slices. Place on a baking sheet.

  3. Bake for about 5 minutes. Set aside.
  4. Heat grill to medium high heat. Oil or spray grates well.
  5. Toss peach slices with oil, salt and pepper.
  6. Grill for 1 minute per side.

  7. Top each slice of bread with a thin slice of mozzarella.
    Top with cheese
  8. Top with peaches.
  9. Sprinkle fresh herbs on top.
