Are you tired from the classic salad recipes? Are you maybe looking for new ways to eat the corn? Stop scrolling and make this delicious and healthy corn salad. This version is loaded with broccoli florets and avocado, all fresh and all packed with perfect nutrients good for your body and health. All you have to do is to chop up some delicious grilled corn, broccoli florets, and creamy ripe avocado. In summer, this could be the best way to enjoy corn eating clean and healthy.

Ingredients

Corn Salad With Broccoli and Avocado

  • 2 ears of corn
  • 1 head of fresh broccoli florets diced finely
  • 1 avocado, diced in cubes
  • 1 ½ tbsp . soy sauce
  • 2 tablespoons olive oil
  • Zest of ½ lemon
  • Juice of ½ lemon
  • Salt to taste

Directions

Corn Salad With Broccoli and Avocado

  1. Heat a grill pan over medium-high heat. Cook the corn on all sides until slightly charred, about 10 minutes.

  2. Let corn cool slightly and cut off kernels. Place in a large bowl.

  3. Add remaining ingredients and gently toss to combine.

  4. Serve immediately, or refrigerate for a half-hour.
