This easy meal that will feed a crowd is super delicious I can tell. Potatoes, turkey and brussels sprouts are a winning combination of flavors that are going to bring the best lunch or dinner in around 30 minutes. Not only the family will eat healthier meals, but also the kids will love their brussels sprouts prepared this way! You can make them with just turkey breast or use regular chicken breast. Turkey is the better option because not only tastes better, it’s healthier as well.

Ingredients

Kielbasa, Brussels Sprouts, Potato & Pear Skillet

  • 1 tbs. olive oil
  • 1 lb. potatoes, cut into cubes
  • 1 medium onion, chopped
  • ¾ lb. Brussels sprouts, cut into quarters
  • 1 medium pear, cut into ½ cubes
  • 2 garlic cloves, minced
  • 2 tsp. Dijon mustard
  • 1 tsp. smoked paprika
  • ¾ tsp. sea salt
  • ¼ tsp. fresh ground black pepper
  • ½ cup low-sodium chicken broth
  • 1 tbsp. fresh lemon juice
  • 1 lb. turkey breast, cut into small pieces

Directions

Kielbasa, Brussels Sprouts, Potato & Pear Skillet

  1. Heat a large non-stick skillet over medium-high heat with oil.
  2. Add potatoes, onion, and garlic, sauteing for 5 minutes.

  3. Add Brussels sprouts, pear, mustard, and spices. Cook for 2 minutes.

  5. Add chicken broth and bring to a simmer. Cover and cook for about 10 to 12 minutes. Stirring occasionally. Cook until potatoes are tender.
