Don’t wait, try it tonight and enjoy with your loved ones with this special meal.IngredientsTurkey Quesadillas1 tsp. oil½ cup thinly sliced onions½ cup thinly sliced red pepper8 oz. turkey breast meat, shredded2 tsp. reduced sodium taco seasoning¼ tsp. salt4 oz. shredded low fat Mexican cheese mix8 low carb tortillasCranberry Apple Salsa½ cup whole berry cranberry sauce¼ cup finely diced apple¼ cup finely diced onion2 tbsp. finely chopped cilantro1 tbsp. finely chopped jalapenoJuice ½ lime¼ tsp.saltDirectionsHealthy Turkey Quesadillas with Cranberry Apple Salsa In a non-stick skillet, heat oil over medium heat. Add onions and red peppers. Sauté for 5 minutes, or until tender. Add turkey, taco seasoning and salt. Sauté for another 5 minutes, or until turkey is hot. Place on a plate. Wipe out the skillet with a paper towel and return to medium heat. Place four tortillas on a work surface. Top with turkey mixture and cheese. Top with remaining tortillas. Cook tortillas one at a time for 3 to 5 minutes per side. For salsa, mix all ingredients together. Cut quesadillas and serve with salsa.
