Turkey quesadilla is one perfect dish that is easy to make and very delicious. It makes the perfect dish for dinner or snack while watching your favorite tv show. What makes this so special is the sticky cheese and when it melts everything is better with cheese, right? The cranberry salsa is so delicious and absolutely yummy with this flavor combination. Don’t wait, try it tonight and enjoy with your loved ones with this special meal.

Ingredients

Turkey Quesadillas

  • 1 tsp. oil
  • ½ cup thinly sliced onions
  • ½ cup thinly sliced red pepper
  • 8 oz. turkey breast meat, shredded
  • 2 tsp. reduced sodium taco seasoning
  • ¼ tsp. salt
  • 4 oz. shredded low fat Mexican cheese mix
  • 8 low carb tortillas

Cranberry Apple Salsa

  • ½ cup whole berry cranberry sauce
  • ¼ cup finely diced apple
  • ¼ cup finely diced onion
  • 2 tbsp. finely chopped cilantro
  • 1 tbsp. finely chopped jalapeno
  • Juice ½ lime
  • ¼ tsp.salt

Directions

Healthy Turkey Quesadillas with Cranberry Apple Salsa

  1. In a non-stick skillet, heat oil over medium heat.
  2. Add onions and red peppers. Sauté for 5 minutes, or until tender.

  3. Add turkey, taco seasoning and salt. Sauté for another 5 minutes, or until turkey is hot. Place on a plate.

  4. Wipe out the skillet with a paper towel and return to medium heat.
  5. Place four tortillas on a work surface.
  6. Top with turkey mixture and cheese. Top with remaining tortillas.

  7. Cook tortillas one at a time for 3 to 5 minutes per side.

  8. For salsa, mix all ingredients together.
  9. Cut quesadillas and serve with salsa.
