This recipe is inspired by the flavors of India, full of flavor and an easy preparation method that makes perfect for every occasion, dinner or just your lunch. The flavors in this dish will take you to an Indian restaurant and you are going to love it. Served with rice on the side this makes a perfect lunch to feed the whole family. You will love it and enjoy it as in the preparation as well while eating it.

Ingredients

Chicken Marinade

  • 1 lb. boneless, skinless chicken thighs, cut into large chunks
  • ½ cup non-fat Greek yogurt
  • 4 garlic cloves
  • 1 (3 inch) piece of ginger, roughly chopped
  • 2 tbsp. fresh lemon juice
  • 2 tsp. garam masala
  • ½ tsp. ground cinnamon
  • 1 dried chili, seeds removed for less spicy heat

Gravy

  • 4 tsp. Star Butter Flavored Olive Oil
  • 1 cup chopped onion
  • 4 garlic cloves, minced
  • 1 tbsp. minced ginger
  • 1 tsp. ground coriander
  • 1 tsp. garam masala
  • 1 tsp. turmeric
  • 2 tbsp. tomato paste
  • ½ tsp. salt
  • 1 (15 oz.) can fire roasted diced tomatoes, pureed
  • 1 tbsp. honey
  • ¼ cup soy or coconut creamer or fat-free half and half
  • Lime wedges

  2. Add chicken to large plastic bag along with marinade. Refrigerate for at least 1 hour or up to overnight.

  3. Heat a large non-stick skillet over medium high heat with Star Butter Flavored Olive Oil.
  4. Add onion, garlic, and ginger and cook for 5 minutes.

  5. Add coriander, garam masala, turmeric, tomato paste and salt. Cook, stirring constantly for 1 minute.
  6. Add tomato puree and honey, and bring to a simmer.
