IngredientsChicken Marinade1 lb. boneless, skinless chicken thighs, cut into large chunks½ cup non-fat Greek yogurt4 garlic cloves1 (3 inch) piece of ginger, roughly chopped2 tbsp. fresh lemon juice2 tsp. garam masala½ tsp. ground cinnamon1 dried chili, seeds removed for less spicy heatGravy4 tsp. Star Butter Flavored Olive Oil1 cup chopped onion4 garlic cloves, minced1 tbsp. minced ginger1 tsp. ground coriander1 tsp. garam masala1 tsp. turmeric2 tbsp. tomato paste½ tsp. salt1 (15 oz.) can fire roasted diced tomatoes, pureed1 tbsp. honey¼ cup soy or coconut creamer or fat-free half and halfLime wedgesDirectionsIndian Butter Chicken with Olive Oil Place ingredients for marinade into a food processor and puree. Add chicken to large plastic bag along with marinade. Refrigerate for at least 1 hour or up to overnight. Heat a large non-stick skillet over medium high heat with Star Butter Flavored Olive Oil. Add onion, garlic, and ginger and cook for 5 minutes. Add coriander, garam masala, turmeric, tomato paste and salt. Cook, stirring constantly for 1 minute. Add tomato puree and honey, and bring to a simmer. Add chicken (without the marinade). Cover and cook for about 15 minutes, or until chicken is done. Add cream and cook until just warmed.
