This Italian Meatball soup is one of those dishes that can really represent your cooking skills in front of your friends and family. When you want to show off, this is something you want to pick and cook up a storm for your loved ones.

You can premake the meatballs and freeze them just until they are ready to be used in the recipe. That way not only you will make your life easier but also you will have more time to spend with your guests. When it comes to pasta type in this recipe, you can totally use any kind of pasta you want, but I think the smaller the pasta is, the better results you will get. If you want something on the stew side but also enjoy the Italian cuisine, this is the recipe for you!

Ingredients

Italian Meatball Stew

  • ¼ cup breadcrumbs
  • 1 oz. grated parmesan cheese
  • 3 tbsp. minced parsley
  • 1 large egg , lightly beaten
  • 4 garlic cloves , minced, divided
  • 1/2 tsp. dried oregano
  • 1/2 tsp. sea salt
  • 1/4 tsp. fresh ground black pepper
  • 1 lb. ground beef
  • 2 tsp. oil
  • 1 cup finely chopped onion
  • ½ lb. pasta, any shape you like
  • 8 oz. mushrooms
  • 1/4 tsp. red pepper flakes
  • 6 cups low-sodium chicken broth
  • 1 (15 oz.) can beans
  • 1 5 oz. can peas

Directions

Italian Meatball Stew

  1. In a large bowl add the breadcrumbs, ground beef, and stir in the parmesan, parsley, egg, 2 garlic cloves, oregano, salt, and pepper.

  2. With your hands, mix in the meat.
  3. Using about a tablespoon or so of the mixture, roll into a ball. You should have around 15-20.
    Use Spoon to Make Meatballs
  4. Heat a large nonstick pot over medium heat with 1 tsp. oil. When hot, add the meatballs. Brown the meatballs on all sides, about 5 minutes. Transfer to a clean plate.

  5. Add onions and mushrooms to the skillet. Cook until just softened, about 5 minutes.

  6. Stir in the remaining two cloves garlic and red pepper flakes. Cook for about 30 seconds and stir in the pasta. Mix until combined and pour in the broth.

  7. Let it cook for 5 minutes and stir in the cooked meatballs, peas, and beans.
  8. Cover and cook for about 5-10 minutes more.
    Cover and Finish Cooking
  9. Serve and enjoy.
