It will be nice and delicious if you stir it constantly but if you use a nonstick pan, then you will be free to make other things in the kitchen while the rice pudding simmers on the stove. The most important thing to keep in mind is that it will thicken as it sits more and more in the fridge. IngredientsLeches Rice Pudding1 cup uncooked Arborio rice1 fat free Sweetened condensed milk 14oz can1 Fat free evaporated milk 12 oz. can1 Lite coconut milk 13.5 oz. can1 cup coconut creamer or soy creamer original or vanilla1 Vanilla bean or 1 tsp. vanilla extractDirectionsLeches Rice Pudding In a large saucepan, cook rice according to the manufacturer's instructions. In the same saucepan, add all the milk products. Split the vanilla bean in half and use the tip of a small knife to scrape the vanilla caviar out and put it into the pot. Throw the pod in the saucepan too. If using vanilla extract, do not put it in yet. Put the saucepan over medium heat and bring to a boil. Reduce to a very low simmer and stir often. Simmer for about 20 minutes or until pudding is slightly thickened. Take off the heat and stir in the vanilla extract, if using. Rice pudding will continue to thicken as it cools but it should not be stiff. To store the rice pudding, pour into a bowl, and lay plastic wrap right on top of the pudding.
