Are you craving something sweet and decadent? Whoopie pie is a delicious and delectable dessert that is served with your favorite cup of tea or coffee. They make perfect sandwich cookies with the most delicious filling – lemon curd. Lemon and blueberries are a perfect flavor combination.

Ingredients

Lemon Blueberry Whoopie Pie

  • 1 box wild blueberry muffin mix with can blueberries (like Krusteaz)
  • 2 lemons, zested and juiced
  • 1/4 cup water
  • 2 tbsp. oil
  • 3 tbsp. 2% fat plain Greek yogurt
  • 1 large egg
  • 2 egg whites
  • 1/2 cup lemon curd
  • 2 tbsp. Greek yogurt cream cheese, softened
  • 1/2 cup confectioners sugar

Directions

Lemon Blueberry Whoopie Pie

  1. Preheat oven to 400°. Spray a whoopee pan with non-stick baking spray.
  2. Rinse and drain the blueberries.
  3. Mix everything but blueberries together in a medium bowl until just combined.

  5. Place 2 tbsp. batter into each whoopee cup.
  6. Bake for 8-11 minutes, until golden brown on the bottom and edges.
  7. Place on a wire rack to cool.
  8. Refill with remaining batter and repeat baking.
  9. In a small bowl, mix together lemon curd, cream cheese and confectioners sugar.
  10. Once cool, add 2 tsp. of filling to half the cookies. Top with remaining cookies
