Whoopie pie is a delicious and delectable dessert that is served with your favorite cup of tea or coffee. They make perfect sandwich cookies with the most delicious filling – lemon curd. Lemon and blueberries are a perfect flavor combination. IngredientsLemon Blueberry Whoopie Pie1 box wild blueberry muffin mix with can blueberries (like Krusteaz)2 lemons, zested and juiced1/4 cup water2 tbsp. oil3 tbsp. 2% fat plain Greek yogurt1 large egg2 egg whites1/2 cup lemon curd2 tbsp. Greek yogurt cream cheese, softened1/2 cup confectioners sugarDirectionsLemon Blueberry Whoopie Pie Preheat oven to 400°. Spray a whoopee pan with non-stick baking spray. Rinse and drain the blueberries. Mix everything but blueberries together in a medium bowl until just combined. Fold in the blueberries. Place 2 tbsp. batter into each whoopee cup. Bake for 8-11 minutes, until golden brown on the bottom and edges. Place on a wire rack to cool. Refill with remaining batter and repeat baking. In a small bowl, mix together lemon curd, cream cheese and confectioners sugar. Once cool, add 2 tsp. of filling to half the cookies.
