This refreshing and lightened cranberry Waldorf salad is something you will need for a hot summer day. Delicious and super easy to make it will cool you down and feed you full for a couple of hours. Don’t hesitate to add pears instead of apples or just dried raisins instead of dried cranberries, you can not go wrong with this recipe.

Ingredients

Lightened Cranberry Waldorf Salad

  • 1 cup dried cranberries
  • 3 tbsp. sugar
  • 2 cups diced tart apples
  • 1/3 cup walnut pieces
  • ¼ tsp. sea salt
  • ½ cup seedless green grapes, cut into quarters
  • 3/4 cup lite cool whip
  • ¼ cup 0% fat Greek yogurt

Directions

  1. In a food processor, pulse cranberries until they are ground.

  2. Pour cranberries into a large bowl and mix with the sugar. Cover with plastic wrap and put it in the refrigerator overnight.
