Cookies are always a great idea and this one is something you want to try as soon as you read the whole recipe. It’s low in calories, delicious and full of pumpkin flavor. This can be made in advance and serve them later for maximum enjoyment. Everything that needs to be done is to have just 15 minutes to make the batter and dollop the cookies on a baking trey lined with parchment paper. When the cookies will be all done and baked they are ready for cooling and after that comes the fun part. Spread the frosting on top of each cookie for maximum treat to yourself. Start making them now.

Ingredients

Lightened Pumpkin Cookies

  • 1 ¼ cups 150 grams all-purpose flour
  • ¾ cup 90 grams whole wheat pastry flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • ¼ tsp. ground ginger
  • 1/8 tsp. ground nutmeg
  • 2/3 cup sugar
  • 4 tbsp. unsalted butter softened
  • 4 tbsp. reduced fat cream cheese softened
  • 1 large egg
  • 1 cup pumpkin puree
  • 1 tsp. vanilla

Vanilla Butter Frosting

  • 1 ½ tbsp. unsalted butter softened
  • ¾ cup confectioners’ sugar
  • ¾ tsp. vanilla extract
  • 2 tsp. milk

Directions

  1. Preheat oven to 375°. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, whole wheat flour, baking powder, salt, cinnamon, ginger and nutmeg.

  3. In the bowl of a stand mixer, beat together butter, cream cheese and sugar until light and fluffy, about 5 minutes.

  4. Mix in the egg, pumpkin puree, and vanilla.

  5. Stir in the flour until just combined.

  6. Drop 1 tbsp. of batter onto the baking sheet leaving about 1 inch in between each cookie.

  8. Place baking sheet onto a wire rack and cool for 5 minutes.
  9. Take cookies off baking sheet and place directly on wire rack to cool completely.
