Yukon gold potatoes cut into 1 inch chunks*1 lb. cauliflower florets3 garlic cloves peeled1 ½ tsp. salt divided½ cup 2% fat milk¼ cup 2% fat plain Greek yogurt2 tbsp. unsalted butter¼ tsp. fresh ground black pepper1 ½ cup shredded leftover chicken or turkey¾ cup shredded 2% reduced fat extra sharp cheddar cheese½ cup chopped green onionDirectionsLoaded Mashed Potato Casserole Preheat oven to 350°. Place potatoes and 1 tsp. salt in a large pot and cover with cold water. Bring to a boil and cook for 7 to 10 minutes or until fork-tender. Scoop out with a slotted spoon and place into a bowl. Mash the potatoes. Bring water back to a boil and add cauliflower and garlic. Cook for 3 to 5 minutes or until fork-tender. Drain cauliflower and garlic and place into a food processor. Add milk, yogurt, butter, ½ tsp. salt and pepper and puree until smooth. Pour into the bowl of mashed potatoes and stir well to combine. Spray an 11 x 7-inch oven-proof baking dish with non-stick spray. Spoon in the mashed potatoes. Top with bacon crumbles and cheese. Cover and bake for 30 minutes.
