This version of mashed potatoes is super healthy and infused with a super healthy ingredient – cauliflower. You are going to love the magnificent taste that cauliflower will develop in this recipe. The best part comes when you will top this everything with cheese and you are going to melt it in the oven. Absolutely easy to make and super delicious. You can use this as a side dish for your upcoming party or this can be a nice dish for a potluck!

Ingredients

Loaded Mashed Potato Casserole

  • 2 lbs . Yukon gold potatoes cut into 1 inch chunks*
  • 1 lb. cauliflower florets
  • 3 garlic cloves peeled
  • 1 ½ tsp. salt divided
  • ½ cup 2% fat milk
  • ¼ cup 2% fat plain Greek yogurt
  • 2 tbsp. unsalted butter
  • ¼ tsp. fresh ground black pepper
  • 1 ½ cup shredded leftover chicken or turkey
  • ¾ cup shredded 2% reduced fat extra sharp cheddar cheese
  • ½ cup chopped green onion

Directions

Loaded Mashed Potato Casserole

  1. Preheat oven to 350°.
  2. Place potatoes and 1 tsp. salt in a large pot and cover with cold water. Bring to a boil and cook for 7 to 10 minutes or until fork-tender.

  3. Scoop out with a slotted spoon and place into a bowl. Mash the potatoes.
  4. Bring water back to a boil and add cauliflower and garlic. Cook for 3 to 5 minutes or until fork-tender.

  5. Drain cauliflower and garlic and place into a food processor.

  6. Add milk, yogurt, butter, ½ tsp. salt and pepper and puree until smooth.

  7. Pour into the bowl of mashed potatoes and stir well to combine.
    Mix all ingredients
  8. Spray an 11 x 7-inch oven-proof baking dish with non-stick spray.
  9. Spoon in the mashed potatoes.
  10. Top with bacon crumbles and cheese.
  11. Cover and bake for 30 minutes.
  12. Sprinkle with green onions and serve.
