IngredientsMarinated Skirt Steak1/2 cup reduced-sodium soy sauce2 tbsp. marinade2 tbsp. honey1/4 cup olive oil2 tsp. Sea salt1/4 tsp. fresh ground black pepper, divided2 1/2 lbs. skirt steakChimichurri Sauce1/2 cup minced fresh flat-leaf parsley1/2 cup minced fresh mint1/4 cup minced red onion1 tbsp. fresh minced oregano3 garlic cloves, minced1/4 cup fresh lemon juice1/4 cup red wine vinegar1/4 cup water2 tbsp. extra virgin olive oilDirectionsMarinated Skirt Steak With Chimichurri Sauce In a small bowl, whisk together soy sauce, marinade, honey, olive oil, 1/2 tsp. salt and 1/8 tsp. black pepper. Pour into a plastic bag and add the skirt steak. Marinate overnight. In a medium bowl, stir together ingredients for chimichurri sauce and refrigerate for at least one hour. Pour a little oil onto a paper towel and whip a grill pan with the oil. Put over medium-high heat and heat until the pan just starts to smoke. Cook the skirt steak on one side for 3 minutes. Turn over and cook for another 2 minutes for medium-rare steak. Place the steak onto a cutting board and let rest for at least 5 minutes. Thinly slice the steak across the grain. Serve with sauce.
