Ingredients

Meatloaf With Zucchini

  • 1 ½ lb. ground beef
  • Salt and pepper to taste
  • 2 large eggs, room temperature
  • 1 small zucchini, shredded
  • ½ teaspoon chili flakes
  • 1 teaspoon dried oregano
  • 1 small onion, diced
  • 1 garlic clove, minced
  • ¼ cup breadcrumbs

Directions

Meatloaf With Zucchini

  1. In a large mixing bowl add the ground beef, salt and pepper to taste, eggs, shredded zucchini, chili flakes, dried oregano, diced onion, minced garlic, and breadcrumbs.
    Mix All Ingredients
  2. Mix well until well combined and transfer the whole mixture into a loaf pan lined with a piece of parchment paper.

  3. Bake in an already heated oven at 350 F or 180 C degrees for about 35-40 minutes.
  4. Let it cool slightly and serve.
