They are super delicious and very fun to make. First, you make that flaky and crispy pastry so you can mold the pies in a muffin tin. After, you make the delicious filling with apples, cinnamon, and everything that associates fall. And finally, you make a crunchy and crispy topping with chopped walnuts for maximum enjoyment. IngredientsPie Crust1/4 cup unsalted butter, softened2 tbsp. 0% fat Greek Yogurt1/4 cup granulated sugar1/2 tsp. pure vanilla extract2/3 cup (80 grams) all-purpose, unbleached flour1/3 cup (40 grams) whole wheat pastry flourApple Filling1 granny smith apple, peeled and diced1 tbsp. while wheat pastry flour1 tbsp. brown sugar1 1/2 tsp. Domino Light (sugar/stevia mix)1/4 tsp. lemon zest1/2 tsp. lemon juice1 1/2 tsp. ground cinnamonPinch of nutmeg1/2 tsp. pure vanilla extractWalnut Topping1/2 cup finely chopped walnuts2 tbsp. brown sugar2 tbsp. light butter, meltedDirectionsMini Apple Walnut Pies Preheat oven to 400°. Spray a 24-cup mini muffin tin with non-stick baking spray. For the crust: cream butter, sugar, and yogurt. Stir in the vanilla. Then mix in the white and wheat flour until a smooth dough forms. Press 2 tsp. of pie dough into each muffin cup pushing the dough up the sides of the cup. With a fork, prick holes in the bottom of each pie crust. Bake for 5 minutes. In a large bowl, combine apple, flour, brown sugar, Domino light, lemon zest, lemon juice, cinnamon, nutmeg, and vanilla. In a small bowl, toss together pecans, sugar, and melted butter. Spoon 1 tbsp. apple mixture into each cup. Top with 1 tsp. pecan mixture. Bake for 10 to 15 minutes. Place on a wire rack to cool.
