There is nothing better you can celebrate autumn with unless you make these delicious mini apple walnut pies. They are super delicious and very fun to make. First, you make that flaky and crispy pastry so you can mold the pies in a muffin tin. After, you make the delicious filling with apples, cinnamon, and everything that associates fall. And finally, you make a crunchy and crispy topping with chopped walnuts for maximum enjoyment.

Ingredients

Pie Crust

  • 1/4 cup unsalted butter, softened
  • 2 tbsp. 0% fat Greek Yogurt
  • 1/4 cup granulated sugar
  • 1/2 tsp. pure vanilla extract
  • 2/3 cup (80 grams) all-purpose, unbleached flour
  • 1/3 cup (40 grams) whole wheat pastry flour

Apple Filling

  • 1 granny smith apple, peeled and diced
  • 1 tbsp. while wheat pastry flour
  • 1 tbsp. brown sugar
  • 1 1/2 tsp. Domino Light (sugar/stevia mix)
  • 1/4 tsp. lemon zest
  • 1/2 tsp. lemon juice
  • 1 1/2 tsp. ground cinnamon
  • Pinch of nutmeg
  • 1/2 tsp. pure vanilla extract

Walnut Topping

  • 1/2 cup finely chopped walnuts
  • 2 tbsp. brown sugar
  • 2 tbsp. light butter, melted

Directions

Mini Apple Walnut Pies

  1. Preheat oven to 400°.
  2. Spray a 24-cup mini muffin tin with non-stick baking spray.
  3. For the crust: cream butter, sugar, and yogurt.
  4. Stir in the vanilla. Then mix in the white and wheat flour until a smooth dough forms.

  5. Press 2 tsp. of pie dough into each muffin cup pushing the dough up the sides of the cup.
  6. With a fork, prick holes in the bottom of each pie crust.
  7. Bake for 5 minutes.
  8. In a large bowl, combine apple, flour, brown sugar, Domino light, lemon zest, lemon juice, cinnamon, nutmeg, and vanilla.

  9. In a small bowl, toss together pecans, sugar, and melted butter.
  10. Spoon 1 tbsp. apple mixture into each cup.
  11. Top with 1 tsp. pecan mixture.
  12. Bake for 10 to 15 minutes.
  13. Place on a wire rack to cool.
