These no-bake oatmeal cookies with different types of dried fruit are a real hit in my home. They are super healthy, nutritious and let me tell you something – they are ready in less than 10-15 minutes. You basically will just need to blitz all the ingredients in the food processor, mini chopper, or high-speed blender and create the cookie no-bake dough. Then, it’s time for rolling. Best way to teach your kids some kitchen essentials is to include them in these cookies.
You can eat them with tea or a cup of milk and enjoy the best flavors mixed together.

Ingredients

No Bake Oatmeal Cookies With Fruit

  • ¾ cup unsweetened shredded coconut King Arthur
  • ¾ cup dried apricots
  • 1 cup dried mango or pineapple I used Sunsweet
  • ½ cup dried cranberries or cherries reduced sugar
  • ½ cup sliced raw almonds
  • ½ cup quick cooking oats

Directions

  1. Place coconut, apricots, mango, and cranberries in a food processor. Process for 1 minute.

  2. Add almonds and oats. Process for another minute.

  3. Using a tablespoon, pack the mixture hard into it. Really pack it down so it forms a half-circle. Gently press down on one side to pop out the cookie.
  4. Place onto a baking sheet or cutting board. Repeat with remaining dough.
  5. Refrigerate until hard.
