This delicious vegan version of the traditional cobbler has peaches, blueberries, and raspberries. Its colors will make your guests fall in love before its glorious taste does!

This cobbler has a touch of acidity combined with the intensity of red fruits and the unmistakable almonds’ flavor. You can use any other fruit and also any other nut butter. Believe us, the cobbler has that magic ability to taste good and to be celebrated in almost any of its forms!

Ingredients

For Fruit

  • 32 oz. peaches
  • 1 cup blueberries
  • 1 cup raspberries
  • ½ cup maple syrup
  • 2 tablespoons lemon juice

Biscuit Cobbler

  • 1 cup almond flour
  • ½ cup oats
  • ½ cup brown sugar
  • ½ cup buckwheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ cup almond butter, softened
  • ½ cup unsweetened soy or almond milk
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon baking powder
  • ½ teaspoon sea salt

Directions

Peach Cobbler With Blueberry Biscuits

  1. Mix together vinegar and vegetable milk. Stir and set aside.
  2. Preheat the oven to 375ºF.
  3. In a medium bowl, mix together the fruit ingredients.
  4. In another medium bowl, whisk together the biscuit cobbler ingredients.
  5. Place the fruit ingredients in a baking pan and cover with the biscuit.
  6. Sprinkle with brown sugar.
  7. Bake for 50 to 55 minutes until the biscuits look golden brown.
  8. Allow to cool before serving.
