Ingredients

Pumpkin Butter Oatmeal French Toast Muffins

  • 1 loaf of bread, diced into cubes
  • 1 ½ cup whole milk
  • 5 large eggs, room temperature
  • ¾ cup canned pumpkin
  • 2 tablespoons turbinado sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon

Streusel Topping

  • ¾ cup flour
  • ¼ cup coconut oil
  • ⅓ cup chopped walnuts
  • ½ teaspoon cinnamon

Directions

Pumpkin Butter Oatmeal French Toast Muffins

  1. In a large mixing bowl add the whole milk, eggs, canned pumpkin, turbinado sugar, vanilla extract, and cinnamon.
    Mix Ingredients in Bowl
  2. Mix well and stir in the diced bread and let it soak for a couple of minutes.
    Add Bread to Mixed Ingredients
  3. Transfer the soaked bread pieces in a greased muffin tin with coconut oil or butter.
  4. Transfer the soaked bread pieces in a greased muffin tin with coconut oil or butter.
    In a bowl mix the flour, coconut oil, chopped walnuts, and cinnamon.
    Add Mixture to Muffin Tin
  5. Top the muffins with the streusel and bake in an already heated oven at 350 F or 180 C degrees for about 20 minutes.

  6. Serve while still warm or as needed.

    The word “oatmeal” is in the name of this muffin, but I don’t see it listed in the ingredients list. Is there an updated recipe that I’ve missed?

      I was wondering the same thing…I don’t see oatmeal as an ingredient.
