If you crave something sweet for breakfast and healthy at the same time, you are going to love this next recipe. It’s raspberry chia seed yogurt parfait and it’s delicious as it sounds like. It can be done overnight or if you don’t have time to wait then you will make it in an hour period of time stirring constantly every 10 minutes so the chia seed will make pudding like consistency. You can serve this with your favorite granola on top and some fresh raspberries to make a prettier presentation, but also you are going to love how refreshing this breakfast is.

Ingredients

Raspberry Chia Seed Yogurt Parfait

  • ½ cup non-fat milk
  • ½ cup non-fat Greek yogurt
  • 1 cup raspberries, divided
  • ½ tsp. vanilla extract
  • 1 to 2 tsp. splenda or stevia or honey to your taste
  • 3 tbsp. chia seeds
  • 6 tbsp. Cherry Cinnamon Granola or any Low fat Granola
  • 1 Mango, peeled and chopped

  1. Put milk yogurt, ½ cup raspberries, vanilla and splenda in a blender. Puree.

  2. Pour into a bowl and whisk in chia seeds.

  3. Cover with plastic wrap directly on top of the chia mixture and chill overnight.

  4. Into 3 bowls, layer chia yogurt, granola then fruit. Repeat with another layer.
