They say a little goes a long way, and that’s perfectly true, especially in this recipe because a little herbs and spices will bring the best possible flavor in mashed potatoes you have ever tasted. The freshness from the onions and the creaminess from the sour cream just make all the difference. They are perfect for entertaining, as a side dish for your dinner party or just make them as a snack during the day. Kids will especially love the simplicity of this recipe.

Ingredients

Sour Cream and Onion Smashed Red Potatoes

  • 1 1/2 lbs. red potatoes, cut into 1 1/2 inch chunks
  • 1 garlic clove, smashed
  • 1 tsp. sea salt, divided
  • 1/2 cup non-fat milk
  • 6 tbsp. reduced fat sour cream
  • 1/4 cup finely chopped green onion
  • 1/4 tsp. fresh ground black pepper

Directions

Sour Cream and Onion Smashed Red Potatoes

  1. Place potatoes, garlic, and 1/2 tsp. salt in a pot and cover with cold water.
    Place Ingredients in cold water pot
  2. Bring to a boil. Boil until potatoes are fork-tender, about 10 minutes.
  3. Drain and place back in the pot.
  4. Add milk and mash potatoes with a potato masher until most of the lumps are gone.
    Fork-tender Potatoes
  5. Stir in milk, sour cream, green onion, salt, and pepper.
