Spiked apple bread with walnuts is a delicious treat for a nice dessert. It’s easy to make and to make it all you have to do is to stir all the ingredients in a single bowl and pour the mixture to a loaf pan. It’s baked for almost an hour. You can serve it with whipped cream that is infused with cinnamon but it’s delicious as it is. The most fun part comes with the glaze. Drizzle on top and enjoy!

Ingredients

Spiked Apple Bread with Walnuts

  • 1 ¼ cups (150 grams) all purpose flour
  • ¾ cup (90 grams) white whole wheat flour
  • 1/3 cup (90 grams) brown sugar
  • 2 tbsp. (20 grams) Domino sugar-stevia mix or an additional ¼ cup granulated sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. Salt 2 tsp. cinnamon
  • 2 cup grated apple, about 2 medium, squeezed dry (I did not peel mine)
  • ¼ cup chopped Walnuts
  • 1 cup 2% fat Greek yogurt
  • ½ cup eggbeaters or 2 eggs
  • 1 tsp. lemon juice
  • ½ tsp. apple extract, optional

Glaze

  • 3 tbsp. confectioners sugar
  • 2 tsp. vanilla extract

Directions

Spiked Apple Bread with Walnuts

  1. Preheat oven to 350°.
  2. Coat 8 x 4 loaf pan with cooking spray.
  3. In a large bowl, mix together all-purpose flour, whole wheat flour, sugar, sugar/stevia, baking powder, baking soda, salt and cinnamon. (Reserve 2 tbsp. of flour mixture)

  4. In a medium bowl, mix together yogurt, eggbeaters and apple extract, if using.

  5. In a small bowl, toss grated apple and walnuts with 2 tbsp. reserved flour.

  6. Fold yogurt mixture into flour mixture. Stir to combine completely.
  7. Fold in apple mixture until just combined.
  8. Pour into the loaf pan.
  9. Bake for about 50 minutes to 1 hour, until toothpick inserted comes out clean.
  10. Set on wire rack. Using a toothpick, prick holes all over the top of the bread. Brush on 1 tbsp. Vanilla extract.
  11. Let cool for 10 minutes. Take bread out of pan and place upside down on wire rack. Poke holes in the bottom of the bread.
  12. Let cool completely.
  13. Place a piece of wax paper under a wire rack.
  14. Drizzle over the bread.
