It’s easy to make and to make it all you have to do is to stir all the ingredients in a single bowl and pour the mixture to a loaf pan. It’s baked for almost an hour. You can serve it with whipped cream that is infused with cinnamon but it’s delicious as it is. The most fun part comes with the glaze. Drizzle on top and enjoy! IngredientsSpiked Apple Bread with Walnuts1 ¼ cups (150 grams) all purpose flour¾ cup (90 grams) white whole wheat flour1/3 cup (90 grams) brown sugar2 tbsp. (20 grams) Domino sugar-stevia mix or an additional ¼ cup granulated sugar1 tsp. baking powder½ tsp. baking soda1 tsp. salt1 tsp. Salt 2 tsp. cinnamon2 cup grated apple, about 2 medium, squeezed dry (I did not peel mine)¼ cup chopped Walnuts1 cup 2% fat Greek yogurt½ cup eggbeaters or 2 eggs1 tsp. lemon juice½ tsp. apple extract, optionalGlaze3 tbsp. confectioners sugar2 tsp. vanilla extractDirectionsSpiked Apple Bread with Walnuts Preheat oven to 350°. Coat 8 x 4 loaf pan with cooking spray. In a large bowl, mix together all-purpose flour, whole wheat flour, sugar, sugar/stevia, baking powder, baking soda, salt and cinnamon. (Reserve 2 tbsp. of flour mixture) In a medium bowl, mix together yogurt, eggbeaters and apple extract, if using. In a small bowl, toss grated apple and walnuts with 2 tbsp. reserved flour. Fold yogurt mixture into flour mixture. Stir to combine completely. Fold in apple mixture until just combined. Pour into the loaf pan. Bake for about 50 minutes to 1 hour, until toothpick inserted comes out clean. Set on wire rack. Using a toothpick, prick holes all over the top of the bread. Brush on 1 tbsp. Vanilla extract. Let cool for 10 minutes. Take bread out of pan and place upside down on wire rack. Poke holes in the bottom of the bread. Let cool completely. Place a piece of wax paper under a wire rack.
