What if you took a handful of oatmeal, some fresh fruit, fresh vegetable milk, and all the protein power of an egg? Sounds like the perfect breakfast to win the day! And that’s what this amazing Strawberry Banana Baked Oatmeal is all about.

Its pudding-like texture will surprise you.

As simple as it sounds, and yet an incredible combination.

Ingredients

Strawberry Banana Baked Oatmeal

  • 2 cups rolled oats
  • ¼ cup rice flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 1 cup strawberries, hulled and diced
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups almond milk
  • 2 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 tablespoon butter, melted
  • 1 egg
  • ¼ cup maple syrup

Directions

Strawberry Banana Baked Oatmeal

  1. Preheat the oven to 375°. Cover an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, combine rolled oats, rice flour, diced strawberries, cinnamon, cardamom, baking powder, and salt.
  3. In another medium bowl, mix together almond milk, mashed bananas, vanilla extract, butter, beaten egg, and maple syrup.
  4. Mix everything together and pour into the baking pan.
  5. Pour batter into the pan.
  6. Bake for 50 minutes or until cooked through.
