Imagine a nice plate served with strawberry cheesecake icebox pie that screams summer. No matter if it’s winter, spring, summer or fall you are going to love this ice box cake. It’s refreshing and full of flavor. One piece will keep you full, its loaded with proteins with the chia seeds in the strawberry jam and it’s delicious as it sounds like. It will take only 10 minutes to prep the ingredients mix them and place them in premade crust. The waiting process can be a little tricky but trust me it will be worth all the effort. Share with your family, loved ones or friends. They will be more than thankful.

Ingredients

Strawberry Cheesecake Icebox Pie

  • 1 reduced fat graham cracker crust
  • 1 cup sliced strawberries
  • ¼ cup agave
  • 1 ½ cups strawberry chia seed jam divided
  • 4 oz Greek yogurt cream cheese softened
  • ½ tsp vanilla extract
  • 1 cup coconut whipped topping thawed

Directions

  1. In a medium bowl, mix together sliced strawberries, agave and half of strawberry jam.

  2. In a food processor, whip together cream cheese and vanilla extract until smooth.

  4. Stir into strawberry mixture.
