This salad is nothing but true pleasure when strawberries are in season! You will get all the nutrients from the poppy seeds, greens, and strawberries. There are a ton of proteins in the meat. Simple, delicious, and very easy to make. You will love the refreshing taste from the greens and strawberries, but also will enjoy the crunch from the poppy seeds. This salad makes a perfect whole meal and you can replace lunch or dinner because of its proteins. Also, if you want to eat this cold salad outside, you can pack it in an airtight container because this salad travels really well!

Ingredients

Strawberry Poppy Seed Pasta Salad

  • 1/4 cup apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tbsp agave or honey
  • 1/2 tsp kosher salt
  • 1/4 cup extra-virgin olive oil
  • 1/2 lb boneless skinless chicken tenders
  • 1/2 box Barilla Penne
  • 1 1/2 cups super greens mix like kale, spinach, etc., julienned
  • 1 cup sliced strawberries
  • 1/4 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1 tbsp poppy seeds

Directions

Strawberry Poppy Seed Pasta Salad

  1. In a small bowl, whisk together the first four ingredients. Slowly whisk in olive oil.
  2. Place chicken in a plastic bag and pour in 3 tbsp. dressing. Let the chicken sit for 30 minutes. (Put the remaining dressing in the refrigerator)

  3. Pour a little oil on a paper towel and rub over a grill pan. Heat a grill pan over medium-high heat.
  4. Cook the chicken 4 to 5 minutes per side, or until fully cooked.

  5. Let cool slightly then thinly slice.
  6. Bring a large pot of water to boil and cook penne according to the manufacture’s instructions. Drain.
