Super refreshing salad that is ready in less than 10 minutes. All you need is to mix up the greens you have in your fridge and add some crunch in it. I have used a perfect combination of sunflower seeds and pumpkin seeds and also I have added some sweetness from the dried cranberries that really goes well with this salad. To make everything more delicious, make that raspberry vinaigrette and drizzle all over the salad to enjoy the best flavors.

Ingredients

Superfood Crunch Salad

  • 12 cups chopped super green mix arugula,baby spinach, etc.
  • 1 cup shredded carrots
  • 1 cup shredded green cabbage
  • 1 cup raspberries
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup sunflower seeds
  • 1/2 cup chopped red onion
  • Raspberry Vinaigrette
  • 6 oz. raspberries
  • 1/4 cup apple cider vinegar
  • 2 tbsp. 2% fat plain Greek yogurt
  • 1 tbsp. honey
  • 1/2 tsp. Dijon mustard
  • 1/2 tsp. sea salt
  • 2 tbsp. extra-virgin olive oil

Directions

Superfood Crunch Salad

  1. In a large bowl, combine the kale and the next seven ingredients.
    Add Kale and Other Ingredients
  2. In a blender, puree all the ingredients for the raspberry vinaigrette except the oil.

  3. Remove the cap from the top of the blender.
  4. While the blender is running, drizzle the oil slowly through the top.
  5. Pour some of the dressing around the outside of the salad and toss gently. Add more as needed*
