IngredientsTurkey and Double Cheese Melts4 large eggs4 egg whites or 6 tbsp. egg substitute2 tbsp. reduced fat milk1/2 tsp. sea salt1/8 tsp. fresh ground black pepper4 slices sourdough bread4 tsp. reduced fat butter2 slices ultra thin cheddar cheese2 slices ultra thin Swiss cheese4 oz. sliced turkeyDirectionsTurkey and Double Cheese Melts Preheat oven to 350•. Spray an 8 x 8-inch baking dish with non-stick cooking spray. In a medium bowl, whisk together eggs, egg whites, milk, salt, and pepper. Pour into the baking dish. Bake for 14-16 minutes, or until the eggs are completely cooked. Place bread on a work surface. Butter each slice on one side only with 1 tsp. butter. Turn the bread over so the side without butter is up. Place cheddar slices on four pieces of bread. Place sliced turkey on top of cheddar cheese. Cut the eggs into four equal parts and place them on top of the turkey. Then top with swiss cheese. Place the unbuttered side of the bread on top of the swiss cheese. Heat a non-stick skillet over medium-high heat. Add the sandwiches and cook for 3 to 4 minutes per side. Cook until the cheese has melted and bread is golden brown.
