What about another fabulous enchilada meal that you are going to love! This healthy enchilada bake is also loaded with different flavors that you are going to love and enjoy with friends and family. A casserole dish layered with tortillas, loaded with enchilada greatness and everything mixed with a great homemade salsa verde – oh, much made in heaven! The thing that makes this dish super delicious and light and healthy is the super refreshing taste of the homemade salsa verde loaded with fresh herbs and lots of flavors. You can premake the salsa verde sauce, cook and shred your turkey and just assemble it before serving. This super easy dish that will feed a crowd and will help you show off in front of the family.

Ingredients

Turkey Enchilada

  • 1 cup chopped onion
  • 1/2 cup chopped freshly chopped purple basil.
  • 2 cloves garlic
  • 2 cups shredded cooked turkey breast
  • 12 oz fresh chopped broccoli thawed
  • 1/2 cup Greek yogurt
  • 4 flour tortillas
  • 2 oz crumbled feta

Salsa Verde

  • ½ cup chopped parsley
  • 3-4 tablespoons olive oil
  • 2 garlic cloves, minced
  • Juice of ½ lemon
  • 1 teaspoon dijon mustard
  • Salt and pepper to taste

Directions

Turkey Enchilada Casserole With Salsa Verde

  1. Preheat oven to 425°. Spray a 13 x 9-inch baking dish with non-stick cooking spray.
  2. In a blender, puree the onion, purple basil, garlic, and all the salsa verde ingredients until smooth.

  3. In a large bowl, stir together 3/4 cup salsa mixture, turkey, broccoli, and Greek Yoghurt.

  4. Layer five corn tortillas on the bottom of the baking dish. You can cut a tortilla in half to cover the bottom easier.

  5. Spread turkey mixture evenly over the tortillas.

  6. Top with remaining tortilla, cutting them to fit.

  7. Spoon the remaining salsa mixture on the top and sprinkle with cheese.
  8. Cover with foil and bake for 30 minutes.
