This is a super delicious appetizer or just finger food and it’s suitable for parties and dinner gatherings. You can use your leftover meat and mix it up with some veggies to develop some fresh and juicy flavor and roll the filling in phyllo dough. The crunchy part comes when you will bake them with a little bit of olive oil and you can enjoy them warm from the oven or just cold. They will be still so good.

Ingredients

Turkey Pot Pie Bites

  • 1 TSP. OIL
  • 1/4 MEDIUM ONION, CUT IN QUARTERS
  • 1 MEDIUM CARROTS, ROUGHLY SLICED
  • 1 STALK CELERY, ROUGHLY SLICED
  • 3 OZ. POTATOES, ROUGHLY CHOPPED
  • 1 GARLIC CLOVE, MINCED
  • 1/4 TSP. DRIED OREGANO
  • 1/4 TSP DRIED THYME
  • 1/4 TSP. DRIED SAGE
  • 1 TSP. SEA SALT
  • 1/8 TSP. FRESH GROUND BLACK PEPPER
  • 1 CUP SHREDDED TURKEY BREAST
  • 1/2 CUP 2% MILK
  • 1 TBSP. FLOUR
  • 7 SHEETS PHYLLO DOUGH, DEFROSTED IN THE REFRIGERATOR
  • NON-STICK COOKING SPRAY

Directions

Turkey Pot Pie Bites

  1. PLACE ONION, CARROTS, CELERY, POTATOES, AND GARLIC IN A FOOD PROCESSOR. PULSE UNTIL VERY FINELY CHOPPED.
    Add Ingredients to Food Processor
  2. HEAT A LARGE NON-STICK SKILLET OVER MEDIUM HEAT WITH THE OIL.
  3. ADD THE ONION MIXTURE AND COOK UNTIL TENDER, ABOUT 10 MINUTES.
    Put Ingredients Into Skillet
  4. ADD OREGANO, THYME, SAGE, SALT, AND PEPPER. COOK FOR 1 MINUTE.
  5. ADD TURKEY, COOKING UNTIL HOT.
    Add Turkey to Skillet
  6. IN A SMALL SAUCEPAN, HEAT MILK AND FLOUR OVER MEDIUM HEAT. WHISK CONTINUOUSLY UNTIL THE MILK THICKENS, ABOUT 10 MINUTES. TURN OFF THE HEAT AND LET IT SIT FOR 5 MINUTES. IT WILL CONTINUE TO THICKEN AS IT SITS.
    Whisky Milk and Flour
  7. POUR INTO THE CHICKEN MIXTURE AND STIR.
  8. LET COOL.
  9. PREHEAT OVEN TO 375°.
  10. LAY OUT PHYLLO DOUGH ON A WORK SURFACE. COVER WITH A LAYER OF DAMP PAPER TOWELS AND A CLEAN DRY KITCHEN TOWEL.
  11. PLACE ONE SHEET IN FRONT OF YOU. SPRAY WITH NON-STICK SPRAY.
  12. CUT PHYLLO INTO 4 EQUAL LONG STRIPS. (YOU ARE CUTTING THE SHORT END)
  13. ONE INCH FROM THE BOTTOM OF ONE STRIP, PLACE 1 TBSP. OF TURKEY. FOLD UP THE BOTTOM OF THE PHYLLO UP ONTO THE TURKEY.
  14. FOLD THE RIGHT BOTTOM CORNER OF DOUGH UP AND OVER TO THE LEFT SIDE OF THE CHICKEN MIXTURE TO FORM A TRIANGLE. TAKE THE LEFT CORNER OF THE DOUGH AND FLIP IT UP TO MEET THE LEFT SIDE OF THE DOUGH.
    Place Turkey on Phyllo
  15. TAKE THE LEFT BOTTOM CORNER OF THE DOUGH AND FOLD OVER TO THE RIGHT SIDE. FOLD THE BOTTOM RIGHT SIDE UP TO MEET THE RIGHT CORNER.
    Fold Turkey Phyllo
  16. REPEAT UNTIL THE END OF THE PHYLLO.
  17. REPEAT WITH REMAINING PHYLLO AND TURKEY MIXTURE.
  18. PLACE ON A BAKING SHEET AND SPRAY WITH NON-STICK SPRAY.
  19. BAKE FOR 20 MINUTES.
