Enjoy your meal!IngredientsTurkey Stuffed Sweet Potatoes2 medium sweet potatoes4 tablespoons oil½ cup finely chopped onion½ cup finely chopped carrots½ cup finely chopped leek½ cup finely chopped zucchini8 oz. mushrooms, diced1 teaspoon sea salt¼ teaspoon ground black pepper½ teaspoon dried thyme½ teaspoon dried nutmeg2 tablespoons corn starch2 cups chicken broth8 oz. turkey breast, cubedTo serve: sour cream, ground black pepper, and red pepper flakesDirectionsTurkey Stuffed Sweet Potatoes Put sweet potatoes in the microwave and cook until tender. Cut them in half, lengthwise. In a large saucepan, heat oil over medium heat. Add in onion, carrot, leek, mushrooms, salt, pepper, and thyme. Cook until vegetables are slightly tender. Add in starch and stir until dissolved. Pour broth into the saucepan, and bring to a boil. Cook for 10 minutes then add in turkey. Cook for 10 more minutes until all broth is evaporated.
