Everything happens in a high-speed blender or good food processor, all mixed together chopped very finely, and served all mixed in a bowl with delicious dressing. It feeds a crowd and it will be a good salad idea for the end of summer. Make it in under 15 minutes and enjoy it with the whole family! IngredientsChopped Vegetable Salad4 cups roughly chopped cauliflower4 cups roughly chopped broccoli2 cups roughly chopped carrot2 cups roughly chopped celery1 red pepper roughly chopped1 cup roughly chopped onion2 cloves garlic minced¼ cup apple cider vinegar3 tbsp good olive oil2 tsp Italian seasoning1 tsp sea salt¼ tsp fresh ground black pepperDirectionsChopped Vegetable Salad Place cauliflower into a food processor and pulse until cauliflower is very finely diced. Pour into a large bowl. Repeat with broccoli and remaining vegetables (through onion), one at a time. In a small bowl, whisk together garlic and vinegar. Whisk in olive oil and remaining ingredients.
