I love those flavors and I am so much inspired by Middle Eastern cuisine. This infused pilaf with lemon zest and juice makes a perfect side dish or even lunch served with a piece of cooked chicken. You can make it for your Sunday lunch or even for a light dinner. Delicious as it sounds like. IngredientsLemon Rice Pilaf and Fresh Mint1 tsp. oil1/4 cup minced onion1 clove garlic minced1/2 tsp. salt2 cups long grain rice2 lemons zested and juiced3-3 1/2 cups chicken broth1 tbsp. mintDirectionsLemon Rice Pilaf and Fresh Mint In a medium saucepan, over medium heat, add the oil and onions. Sauté for 4 to 5 minutes. Add the garlic and salt, cook for another minute. Add the rice and toast for 5 minutes. Pour lemon juice into a measuring cup and add chicken broth to measure 3 3/4 cups. Add to the saucepan and bring to a boil. Reduce to a simmer and cover. Simmer for about 15 minutes, until rice is done and liquid is absorbed. Fluff with a fork and stir in lemon zest and mint.
