Lemon pilaf is an inspired dish that comes from Turkey and the Middle East. I love those flavors and I am so much inspired by Middle Eastern cuisine. This infused pilaf with lemon zest and juice makes a perfect side dish or even lunch served with a piece of cooked chicken. You can make it for your Sunday lunch or even for a light dinner. Delicious as it sounds like.

Ingredients

Lemon Rice Pilaf and Fresh Mint

  • 1 tsp. oil
  • 1/4 cup minced onion
  • 1 clove garlic minced
  • 1/2 tsp. salt
  • 2 cups long grain rice
  • 2 lemons zested and juiced
  • 3-3 1/2 cups chicken broth
  • 1 tbsp. mint

Directions

Lemon Rice Pilaf and Fresh Mint

  1. In a medium saucepan, over medium heat, add the oil and onions. Sauté for 4 to 5 minutes. Add the garlic and salt, cook for another minute.

  2. Add the rice and toast for 5 minutes.
  3. Pour lemon juice into a measuring cup and add chicken broth to measure 3 3/4 cups.
  4. Add to the saucepan and bring to a boil.
  5. Reduce to a simmer and cover. Simmer for about 15 minutes, until rice is done and liquid is absorbed.
    Simmer for about 15 minutes
  6. Fluff with a fork and stir in lemon zest and mint.
