This Mediterranean salad with quinoa and chickpeas will absolutely make you feel starving! It’s super easy to prepare and it can be enjoyed warm or super cold out of the fridge. You mix the ingredients in a big bowl and serve right away. How fun is that? No more dishes or extra fancy gadgets. Don’t forget that the best flavors are made with simple ingredients!

Ingredients

Mediterranean Quinoa Chickpea Salad

  • 1 1/2 cups cooked quinoa
  • 15 oz can chickpeas drained and rinsed
  • 1 cup chopped cucumber
  • 1 cup chopped tomato
  • 1/2 cup chopped sweet onion
  • 1/2 tsp sea salt
  • 2 tbsp pomegranate juice
  • 2 tbsp extra-virgin olive oil

Directions

  1. In a medium bowl, mix all ingredients together.
