If you want to make a great appetizer, you don’t have to spend hours in the kitchen. This cranberry pistachio stuffed brie in phyllo dough is a real winner. All you have to do is to wrap the brie in phyllo, but before that, you need to fill it with cranberry sauce and chopped pistachios. It’s all wrapped and baked in an oven until golden brown and crispy.

Ingredients

Cranberry Pistachio Stuffed Brie in Phyllo

  • 1 oz wheel of brie 13.4
  • 1/4 cup whole berry cranberry sauce
  • 1/4 cup crushed pistachios divided
  • 4 sheets of phyllo dough
  • Non-stick cooking spray

Directions

  1. Preheat oven to 400•.
  2. Cut the brie in half horizontally so you have two circles.

  3. Spread cranberry on top of one half. Sprinkle with 2 tbsp. pistachios.
  4. Place other circle of brie on top, making sure the rind is on top.

  5. Lay a piece of phyllo dough onto a work surface and spray with non-stick spray.
  6. Place another piece of dough on top and spray with non-stick spray. Repeat using all 4 sheets.
  7. Place brie in the middle of the phyllo.
  8. Fold up the phyllo around the brie. Spraying the dough each time you fold.

  9. Place the seam side down onto a baking sheet.
  10. Spray the top and sides of the phyllo with cooking spray. Sprinkle with remaining pistachios.
  11. Bake for 10 to minutes, or until phyllo is crisp and lightly browned.
