Yes, you can place all the ingredients in a blender, make a fragrant and delicious spread and top that all with salmon pieces. The best part is that that’s not the end, but you can wrap it in packets and bake them in a heated oven. Super yummy with that delicious Tzatziki sauce! IngredientsGreek Phyllo Salmon Packets6 sheets of phyllo dough, defrostedVegetable oil, such as olive oil or canola oil10 oz. salmon fillets, skin removed diced into cubes1 tsp. sea salt, divided1/4 tsp. fresh ground black pepper1/3 cup reduced fat feta cheese1 teaspoon dried basil1/2 tbsp. fresh thyme2 garlic cloves, chopped1/4 cup chopped leek10 black olives, halved12 seedless grapes, halvedZest of one lemonTzatziki Sauce1/4 cup nonfat Greek Yogurt (I used Fage)1/3 cup grated English cucumber, peeled or unpeeled - your preference1 tbsp. grated onion1 small garlic clove, minced1/4 tsp. sea saltDirectionsGreek Phyllo Salmon Packets Preheat the oven to 400°. Place a wire rack on top of a baking sheet and coat with cooking spray. In a small food processor, pulse together feta cheese, basil, thyme, garlic, leek, olives, grapes, lemon zest and 1/2 tsp. salt. It should look like a paste. Pour the mixture into a strainer over a bowl and gently push out some of the liquid. Place salmon on a cutting board and cut it in cubes. Season it with salt and pepper to taste. Carefully unroll the phyllo dough and place a damp paper towel on top to cover the phyllo completely. Phyllo dough can dry out very quickly so try to work quickly and always keep the extra sheets covered. Uncover phyllo and place 1 sheet with the long side horizontally on a work surface. Cover remaining phyllo dough with the paper towel then lightly spray the single sheet with cooking spray. Do not worry if it rips the next layer of phyllo and cooking spray will act like glue. Place another piece of phyllo directly on top of the first sheet and again spray lightly with cooking spray. Repeat with one more sheet of phyllo for a total of 3 sheets. Cut the phyllo pastry in squares and fill each square with the filling. Add the salmon cubes in each square and wrap them tightly. Arrange them on a cookie sheet lined with parchment paper. Bake for 10-15 minutes. You want the crust lightly brown and the salmon flaky inside the pastry. To make the tzatziki mix all ingredients together and serve with the pockets.
