If you want to try something new in the kitchen, then you might love this next chicken casserole recipe. It’s super creamy and deliciously full of flavor and super easy to make. All you have to do is to cook up homemade chicken creamy soup, shred some chicken ( you can always use some leftover from previous days), and mix them together. To make the dish more decadent you will just top it with some crackers and bake it right away. In the end, you will enjoy the simplicity of this casserole dish that’s super easy to make and I can tell that everyone in the family will love.

Ingredients

Condensed Soup

  • 1 1/2 cups low-sodium chicken broth
  • 1/4 onion
  • 1/4 carrot
  • 1 clove garlic
  • 1 bay leaf
  • 1 lb chicken breast
  • 3/4 cup evaporated fat-free milk
  • 1/2 cup all-purpose flour

Poppy Seed Chicken

  • 1 cup 0% fat plain Greek yogurt
  • 1/2 cup 1% fat cottage cheese pureed
  • 1 tbsp poppy seeds
  • 15 whole wheat Ritz crackers crushed

Directions

Soup

  1. In a medium saucepan, bring the chicken broth, onion, carrot, garlic clove, and bay leaf to a simmer.
  2. Add the chicken and poach for 20 minutes or until chicken is done.
  3. Remove the chicken, vegetables, and bay leaf.
  4. In a small bowl, whisk together evaporated milk and flour.
  5. Bring to a boil the chicken broth to a boil again.
  6. Whisk in the flour mixture.
  7. Continue to stir while mixture thickens, about 3 minutes.
  8. Shred the chicken for the casserole.

Poppy Seed Chicken

  1. Preheat the oven to 350°. Coat an 8 x 8-inch baking dish with non-stick cooking spray.
  2. In a medium bowl, mix together the cream of chicken soup, yogurt, pureed cottage cheese, and poppy seeds.

  3. Stir in the chicken and pour it into the baking dish.

  4. Cover with foil and bake for 30 minutes.
  5. Sprinkle Ritz crumbs on top and spray with non-stick cooking spray.
  6. Bake, uncovered, for 20 minutes.
