IngredientsOne Pot Chicken Strawberry Paella1 tbsp. oil1 cup chopped onion1 cup chopped red pepper4 garlic cloves, minced2 cups Arborio rice3 1/2 cups low sodium chicken broth1 1/4 tsp. sea salt, divided1/4 tsp. black pepper2 lbs. boneless, skinless chicken breast, cut into 2 inch pieces2 cups strawberries, sliced1 cup peas1 tbs. chopped parsley2 tsp. chopped fresh mint1 tsp. grated lemon zestDirectionsOne Pot Chicken Strawberry Paella Preheat oven to 350•. Heat a large ovenproof skillet over medium-high heat. Add the onions, red peppers, and 1/2 tsp. salt, cook until onions are translucent. Add garlic and cook for 1 minute. Add the rice and cook, stirring often, for 5 minutes. Stir in the broth and remaining salt and pepper. Cover the pan with foil. Bake for 20 minutes. Add chicken, strawberries, and peas. Leave uncovered and cook for another 20 to 25 minutes, until rice and chicken are cooked. Remove from the oven and let rest for 5 minutes. In a small bowl, stir together herbs and zest.
