This is a breakfast you want to wake up for! Full of fall flavor, soft and delicious drizzled with maple syrup or honey at the end, you will enjoy this irresistible flavor and you are going to love its taste. This recipe makes a ton of pancakes so you can freeze some for later, microwave them, and boom!, you will have another dinner or breakfast in just 1 minute! You can add different toppings, but trust me they are delicious as they are plain, just with maple syrup or honey.

Ingredients

Low Fat Gingerbread Pancakes

  • 1 cup (120 g) all-purpose flour
  • 1 cup (120g) whole wheat flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. ground ginger
  • 2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 2 large eggs, lightly beaten
  • 3 tbsp. oil
  • 3 tbsp. 0% fat Greek yogurt
  • 1 cup non-fat milk
  • 2 tbsp. molasses
  • 2 tbsp. pure maple syrup or sugar-free maple syrup

Directions

Low Fat Gingerbread Pancakes

  1. In a large bowl, whisk together the first 8 ingredients.

  2. Stir in the remaining ingredients.
    Stir in the remaining ingredients
  3. Heat a griddle to medium heat.
  4. Pour 1/4 cup of batter onto the griddle for each pancake.
    Pour Mixture Onto Griddle
  5. When pancakes start to bubble and form on the end, flip over and cook on the other side until done.
