You’ll love this version of brownie if you’re on a low-carb or cereal diet. Its main ingredient is legumes, rich in nutrients, fiber, and protein. If they don’t convince you on their own, we’ve turned them into a delicious cake: a succulent brownie with a lot of chocolate flavor and creamy chocolate chips melted inside.

Is it a lunch? Is it a snack? Who knows? But it’s really good.

Ingredients

Mint Chocolate Chip Brownies

  • 1 (15 oz.) can black beans, rinsed and drained
  • 3 large eggs
  • ½ cup almond milk
  • 1 cup unsweetened cocoa powder
  • 1 cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons mint extract
  • ½ cup chocolate chips

Directions

Mint Chocolate Chip Brownies

  1. Preheat the oven to 350°F.
  2. Cover a 8 x 8 inch square baking pan with parchment paper.
  3. In a food processor, blend the first 9 ingredients until smooth.
  4. Fold in half the chocolate chips.
  5. Pour batter into the covered baking pan.
  6. Sprinkle remaining chips on top.
  7. Bake for 35-40 minutes, until cooked through but not completely dried out.
  8. Cool on a baking rack.
