Do you crave delicious salad that is healthy and nutritious? Then, this quinoa salad with blackberries and lemon vinaigrette is going to blow your mind. It’s refreshing and super healthy. It’s easy to make and it’s absolutely a must try!

Ingredients

Quinoa Salad with Blackberries and Lemon Vinaigrette

  • 1 cup uncooked quinoa
  • 1 garlic clove, minced
  • 1/3 cup Meyer lemon juice
  • Zest of Meyer lemon
  • 2 tbsp. olive oil
  • 3/4 tsp. salt
  • 1/8 tsp. fresh ground black pepper
  • 1/2 cup chopped cucumber
  • 3/4 cup chopped blackberries
  • 10 mint leaves, chopped
  • 10 basil leaves, chopped

Directions

Quinoa Salad with Blackberries and Lemon Vinaigrette

  1. Cook quinoa according to manufacturer's instructions.
  2. In a large bowl, whisk together lemon juice, garlic, lemon zest, salt and pepper. Whisk in olive oil.
